谷雨——雨水增多，大大有利谷类作物的生长。公历每年4月20日前后为谷雨。

谷雨节气，东亚高空西风急流会再一次发生明显减弱和北移，华南暖湿气团比较活跃，西风带自西向东环流波动比较频繁，低气压和江淮气旋活动逐渐增多。受其影响，江淮地区会出现连续阴雨或大风暴雨。

“谷雨前，好种棉”，又云：“谷雨不种花，心头像蟹爬”。自古以来，棉农把谷雨节作为棉花播种指标，编成谚语，世代相传。

谷雨节的天气谚语大部分围绕有雨无雨这个中心，如“谷雨阴沉沉，立夏雨淋淋”、“谷雨下雨，四十五日无干土”等等。

去暑找黍，白露割谷

吃秋，老北京时不同的阶层人们有不同的吃法。一般中下层的百姓人家讲究“吃秋鲜儿”他们认为吃新粮吃新的蔬果最富有营养。俗语曾有“去暑找黍，白露割谷”之说，入秋后各住户中的主妇们要尝鲜儿，常去购买新上市的玉米(即玉蜀黍)面、玉米渣、高粱米，新小麦磨成的白面。

用这些新粮为老少一家人蒸制出美味的枣窝头、枣馒头、懒龙、花卷以及玉米渣粥、高粱米饭等花样主食，或者割点肉买点新上市的韭菜、茴香、小白菜制作出馋人的水饺、锅贴、菜团子、糊饼、馅盒子等。

家境较好的四合院人家入秋后常烹制红烧肉、红烧鱼、炖鸡鸭等富含蛋白质的肉类佳肴来贴秋膘。而旧京的一些社会名流、文人墨客、演艺界名伶们的吃秋则非常讲究，常携家人或约好友下饭庄饭馆。聚餐，饮酒品尝名肴或吃北京风味的烤鸭烤肉涮肉等名吃。一些人还有手提着全聚德的烤鸭或水果等相互馈赠之俗。这些吃秋及送礼之俗曾是旧京街市及四合院一道市井秋景儿。

柿甜杏酸--果子干

“一候凉风至;二候白露生;三候寒蝉鸣”。立秋之后天气渐凉，秋季宜少辛多酸。由于酸味食物入肝，肝气挟制肺气，从而可使人体维持在一个平衡的状态。故秋天人们在饮食方面要少吃干燥辛辣的食物，多食些养阴生津的酸品。如果您以为所指仅限于酸味的蔬果，确着实过于乏味。今天就给大家还原一道最地道的老北京酸甜小吃。

《燕都小食品杂咏》中有记：“杏干柿饼镇坚冰，藕片切来又一层。劝尔多添三两碗，保君腹泻厕频登。”的诗句，这说的便是“果子干”。果子干原本是老北京夏天极为常见的解暑小吃，但是随着外来冰品的取代，很多人早已将其忘怀。早在唐鲁孙先生的书中有描述道：“过去卖果子干从来不吆喝，可是手里有对小银碗，一手托两碗，用拇指食指夹起上面的，向下面的敲打，敲的好的能敲出好多清脆的花点来。”如今念着，想来也觉是重现了一幅老北京市场里的景象。

其实制作的原料简单至极，只有三样。柿饼、杏干和鲜藕片。可您不要小看这三样东西的配搭，那做法可是极为考究的，要得让成品既不能稀如水，也不能稠如粥。定要先用水将柿饼、杏干泡过，再掰碎发开，临了还要切上几片薄脆的藕片。将整碗镇在冰箱里。吃时舀上一勺，呷一下便一股脑的顺势滑入口中，顿将“两腋生风柿甜杏酸”的妙处了然于心。

白露打枣，秋分卸梨

秋季吃梨，最是滋润清火祛秋燥。“白露打枣，秋分卸梨”是一句农事谚语，新鲜的枣子、水灵灵的梨，都是这个季节成熟的时令果实。梨的种类很多，雪梨、鸭梨、沙梨、香梨、烟台梨等等，每种的外形和口感都不相同。

梨肉多汁，有润肺、祛痰化咳、通便秘、利消化的作用，对心血管也很有好处。但梨性寒容易伤脾胃，不可多吃。除了鲜吃，梨还很适合榨汁或炖甜汤。冰糖雪梨是一道常见的甜品，加上川贝一起炖，止咳效果更佳。

白露喝粥 祛凉防燥
