了解了焖罐肉制作过程的我，觉得这实在是太麻烦了。仅仅为了保存就要费这么大的力，为什么现在的人们还这样做，冰箱不是更简便吗？那时，我的答案是，这是传统。

记忆中的味道在我的记忆中、在我的味蕾中、在我的血液中存在着。

如今，过上安康生活的我再次品尝芡实，未免儿时的味道约显有些欠缺，一来因为当今的芡实价格昂贵，二来花样百出的各种食補疗法替代了那个年代最为粗糙的吃法，当然，细细的斟酌，现代的芡实吃法应该是更具合理性和营养学。不管怎么样，一个不起眼的民间小零食华丽转身登上了大雅之堂，并且在余干美食之乡享有盛名，形成了以种养，深加工，延伸的产业链，其加工的系列产品如芡实饮料和美酒正在漂洋过海远销欧美等国家，为传扬美食之乡---余干赢得了美誉。今秋专程采访，但见余干县三塘乡生态曹氏产业园，芡实茫茫一片，不禁感慨万千，又一次唤醒了儿时的记忆，自觉进入心灵深处的亲切感油然而生，引来了无限忆想。

其实，品尝任何美食，人人都有一种自己味觉的固执，但是，我认为坚守家乡的味觉还是比永久还久，因为那种家乡的味道是维系乡土人情的纽带，历经千秋万代永远都不会去更改，传递的不但是一个地方的美食特色，最为重要的是传递着家乡人的亲情味道。四方游子，无论身在何方，家乡的味道、 童年的味道都是亲情的味道，正宗的味道，令人震撼，直到永远……
