1、有200多种疾病通过食品传播

每年有数百万人因食用不安全食品而患病，还有许多人因此而丧失生命。据估计，每年仅腹泻就夺走180万儿童的生命，而其中大多数疾病因食品或水受到污染所致。适当的食物制备可防止大多数食源性疾病发生。

2、世界范围内食源性疾病在不断增长

5、最大限度地减少禽流感的风险

生肉与其他食品分开

保持清洁并洗手

6、预防疾病从农场开始

从农场一级开始预防动物感染，可减少食源性疾病的发生。例如，把鸡场中的沙门氏杆菌量减少50%(通过改进鸡场管理)，结果会使因感染细菌生病的人减少50%。在一些国家，无沙门氏杆菌鸡群的喂养越来越普遍。

7、化学危害可污染食品

可导致癌症的丙烯酰胺，是在高温烹煮(通常在120°C以上)某些食品过程中由自然成分形成的，包括煎炸土豆产品、烘焙谷物产品和咖啡。食品业正在努力寻找适当的方法，降低接触此类化学品的风险。煎炸、烧烤或烘焙食品时应避免烹制过度。

8、食品安全人人有责
