Cuisine

Yangzhou dishes may be one of the reasons why the people of Yangzhou are so infatuated with their city. They have an appealing color, aroma, taste and appearance. The original color of each ingredient is preserved after cooking, and no oily sauce is added, so as to retain the fresh savor of the food.

In Yangzhou all dishes, whether cheap or expensive, are elaborate. Cooks will not scrimp on their work, even with Zhugansi (stewed sliced dry bean curd), a popular dish that costs only a few yuan. Dry bean curd is made by each restaurant that serves it, so the flavor is guaranteed. The cook slices the 1-cm-thick curd into 30 shreds, each one paper-thin but none broken, and then stews them for hours with chopped bamboo shoots and shelled shrimps in chicken soup. In this way the dry bean curd shreds can soak up the flavor of the other ingredients, and the soup is clear but savory. It is not only Yangzhou cooks but also the ordinary people who are conscientious about cooking.

i"ll tell you an experience of myself happened last week. last thursday our school was tackling something about woking fou study. i wanted to have a try even though i knew the salary was so low and i had little chance,because the students who had the certificate were always thought to have priority to get the job. fortunately i was called at noon and a teacher said to me that she wanted me to work for her and asked if i could change my mind.

Yunnan province is situated in the southwest of China which covers a total area of 394,000 square kilometers. And it is land of natural beauty and mystery. Today people think of it as a “frontier province”, which lie just below the Tibetan plateau and abut Vietnam, Laos and Burma.

Due to peculiar geographical environment, complex landforms and sharp falls and rises in elevation, diversified climatic conditions result. Yunnan is endowed with abundance of breath-taking scenic spots. Sichuan is located in the Upper Yangtze Valley in the southwestern part of the country. The second largest of the Chinese provinces, it covers an area of 220,100 square miles (570,000 square kilometres). Szechwan is bordered by the provinces of Kansu and Shensi to the north, Hupeh and Hunan to the east, and Kweichow and Yunnan to the south and by the Tibet Autonomous Region to the west and the province of Tsinghai to the northwest. It is the most populous province in China. The name Szechwan means “Four Streams” and refers to the four main tributaries of the Yangtze River, which flows through the province. The capital, Cheng-tu, is located in the centre of the province.

From economic, political, geographical, and historical points of view, the heart and nerve centre of Szechwan is in the eastern basin area, commonly known as the Sichuan, or Red, Basin. Its mild and humid climate, fertile soil, and abundant mineral and forestry resources make it one of the most prosperous and economically self-sufficient regions of China. The area has been seen by some as China in a microcosm and is often viewed as a country within a country. The Chinese call the basin Tien Fu Chih Kuo, which literally means “Heaven on Earth”.
