湖北的春节，大都从置办年货开始。在众多年货之中，最重要的就是香肠了。首先把新鲜的肉剁成馅，放入花椒面和最重要的陈皮，香肠的馅就做好了。紧接着，大人就把馅料灌入肠衣，每当这时，我们小孩子就拿着一根针，在香肠上面搜寻着，看见一个气泡就扎下去，随着“嘭”的轻响，香肠被灌得更紧实。最后，大人把香肠用棉绳分成一节一节的，用竹竿晾在阳台上。这时，我们就趴在阳台上，祈祷着香肠能早日晾干。
