Chinese New Years Eve is known as chú xī. It literally means "Year-pass Eve".

Chinese New Year is the longest and most important festivity in the Lunar Calendar. The origin of Chinese New Year is itself centuries old and gains significance because of several myths and traditions. Ancient Chinese New Year is a reflection on how the people behaved and what they believed in the most.

Celebrated in areas with large populations of ethnic Chinese, Chinese New Year is considered a major holiday for the Chinese and has had influence on the new year celebrations of its geographic neighbors, as well as cultures with whom the Chinese have had extensive interaction. These include Koreans (Seollal), Tibetans and Bhutanese (Losar), Mongolians (Tsagaan Sar), Vietnamese (T?t), and formerly the Japanese before 1873 (Oshogatsu). Outside of Mainland China, Hong Kong, Macau, and Taiwan, Chinese New Year is also celebrated in countries with significant Han Chinese populations, such as Singapore, Indonesia, Laos, Malaysia, the Philippines, and Thailand. This is done so that the Kitchen God can report to the Jade Emperor of the family households transgressions and good deeds. Families often offer sweet foods (such as candy) in order to "bribe" the deities into reporting good things about the family.

The biggest event of any Chinese New Years Eve is the dinner every family will have. A dish consisting of fish will appear on the tables of Chinese families. It is for display for the New Years Eve dinner. This meal is comparable to Christmas dinner in the West. In northern China, it is customary to make dumplings (jiaozi 饺子) after dinner and have it around midnight. Dumplings symbolize wealth because their shape is like a Chinese tael. By contrast, in the South, it is customary to make a new year cake (Niangao, 年糕) after dinner and send pieces of it as gifts to relatives and friends in the coming days of the new year. Niangao literally means increasingly prosperous year in year out. 到了晚上夜幕降临,无数颗繁星洒在了黑黑的天空上,妈妈和爸爸和好了馅儿,我们仨开始包饺子,开始分配任务:妈妈擀饺子皮,爸爸和我一起包饺子。我的心里真是既兴奋又紧张,兴奋的是我第1次包饺子,紧张的是我怕饺子露馅儿,爸爸一边教我包饺子一边说:“包饺子有三个特点:一是把饺子皮放在手心里,不要太平放,二是放馅儿放在正中间,好为下一步做铺垫,三是包饺子,先捏中间,后面两边。”我边听边学着包,结果却提成了个“四不像”,爸爸说:“不要灰心,努力就可以,要加油!”爸爸又顺手捏了捏我包饺子说,旁边捏的太松了,要不然煮会成了一锅粥。唉!真是“看花容易,绣花难。”不过,最终凭我自己的努力终于把饺子包好了。

饺子上桌了,我夹了个“畸形”饺子,慢慢品尝起来,喏!浓浓的鸡汁儿直喷入我的口中,香甜的味道在我的口中回味着,我真感受到了一股暖流诵入到我的心头,这就是我品尝到的“年味儿”!
