The Great Wall of China

The Great Wall of China is called the "Ten thousand Ii Great Wall" in Chinese. In fact, it s more than 6 000 kilometres long. It winds its way from west to east, across deserts, over mountains, through valleys till at last it reaches the sea. It is one of the wonders of the world.

The Great Wall has a history of over twenty centuries. The first part of it was built during the Spring and Autumn Period. During the Warring States Period, more walls were put up to defend the borders of the different kingdoms. It was during the Qin Dynasty that the kingdom of Qin united the dif ferent parts into one empire. To keep the enemy out of his empire, Emperor Qin Shi Huang had all the walls joined up. 内蒙古有许许多多的美食，其中具有代表性的就是奶豆腐。

奶豆腐在蒙古语中读作“胡乳达”，是蒙古牧民中家家都有的食品，它的形状酷似豆腐，但却不是豆腐。是用羊奶，牛奶，马奶等凝固，发酵而成的食品。味道也有些不同哦！有的微酸，有的微甜，但有一个共同的特征——乳香浓郁。放在冰箱冷藏过的奶豆腐一定要泡在蒙古特有的大碗奶茶里吃，才能变得有嚼劲，不然口感就会变得比较硬、沙，当然也有喜欢这种口感的人。

奶豆腐味道不同还有一个因素，那就是薄厚程度，厚点的奶豆腐一泡进奶茶就柔韧无比，奶香十足。而薄的奶豆腐则入口即化，格外香甜。

奶豆腐也有分熟奶豆腐和生奶豆腐。传统熟奶豆腐的做法特别难，要把熬制奶皮剩下的奶浆，放置几天，直到发酵为止。当奶浆凝成块时，用纱布把多余的水分过滤掉。再将奶块放到锅里熬煮，边煮边搅，直到粘稠，再装入纱布，把黄水挤出来，装模成型。

生奶豆腐的做法相对简单：把鲜奶发酵，倒入锅里煮，让奶浆变成老豆腐的形状，挤出水分成形。

所以，要想吃到风味食物还是很不容易的！
