我国茶叶的生产也和茶树的栽培历史一样久远，尤其是我国花茶的生产始于南宋，距今已有1000多年的历史。

花茶，亦称熏花茶、香花茶、香片。花茶是以绿茶、红茶、乌龙茶茶坯及符合食用需求、能够吐香的鲜花为原料，采用窨制工艺制作而成的茶叶。花茶是集茶味与花香于一体，茶引花香，花增茶味，相得益彰，既保持了浓郁爽口的茶味，又有鲜灵芬芳的花香。冲泡品啜，花香袭人，甘芳满口，令人心旷神怡。花茶不仅仍有茶的功效，而且花香也具有良好的药理作用，有益人体健康。

最普通的的花茶是用茉莉花窨制的茉莉花茶，根据所用的鲜花不同，还有玉兰花茶、桂花茶、珠兰花茶、玳玳花茶等。普通花茶都是用绿茶制作，也有用红茶制作的。

花茶的制作方法非常考究，以茉莉花茶为例：因为茉莉花茶兼有绿茶和茉莉花的香味，制作时将采摘来的大批含苞欲放的鲜花，堆放于清洁场所，入晚待花半开呈虎爪形，吐香正浓时，将其掺入绿茶中窨制，待鲜花萎缩时除去花朵，烘干茶胚，再用鲜花复窨，如此再三而成。茉莉花每年分三期开放。第一期为初夏时节盛开，乏为“头花”或“霉花”；第二期于暑期伏天盛开，是为“伏花”或“夏花”，用伏花窨制的茉莉花茶，其品质最为清香宜人；第三期则为入秋后盛开的“秋花”。

如何选购花茶呢？据了解，好的花茶主要看其色泽、香气、风味、水分、清洁度等项目。温度高、水分和光线照射过分，都会影响花茶的风味，使花茶中的芳香成分挥发散去。因此我们在选购时，要把握以下几个原则：

1、新鲜干燥：果实、花朵或花草需具干燥感；

2、色泽鲜美：花朵果实有颜色及光泽；

3、香味浓郁：摇动之后花茶散发香气。如果有条件的话可以闻一闻，一方面可以感受一下是不是自己能接受的味道，另一方面是否新鲜也可以闻得出；

4、包装紧密：密闭包装最佳，尽量不要接触空气，潮湿的空气易使果茶变质。包装材质也以不易受光线曝晒为主。

5、一定要小心保存，不要与受潮、发霉的产品摆放一起。

花果茶与花草茶的保存期限不同：坊间贩卖的果茶只要密封好，就可以保存到两年。花草茶的寿命与保存方式、密封程度非常相关，保存环境佳可保存一年，保存环境一般则约半年。一般的保存方式是用干燥的容器保存在阴凉、干燥的环境。开封后尽快饮用，才可保证新鲜度。取用时，要用干汤匙。建议将花茶放入冰箱冷冻库里，注意储藏时应远离腥味，避免与鱼、海鲜等食物摆放在一起。

花茶在国际与国内市场上行销量大的是茉莉花茶。这是因为茉莉的香气为广大饮花茶的人所喜爱，被誉为可窨花茶的玫瑰、蔷薇、兰蕙等众花之冠。宋代诗人江奎的《茉莉》诗赞曰：“他年我若修花史，列作人间第一香。”花茶是我国特有的茶类。主产区为福建、浙江、安徽、江苏等省，近年来湖北、湖南、四川、广西、广东、贵州等省、自治区亦有发展，而非产茶的北京，天津等地，亦从产茶区采进大量花茶毛坯，在花香旺季进行窨制加工，其产量也在逐年增加。
