火鸡即吐绶鸡(Turkey)，又称七面鸡，本为野生，现已驯化为肉用家禽。全身被黑、白、深黄等色羽毛。头、颈上部裸露，有红珊瑚状皮瘤，喉下有肉垂，颜色由红到紫，可以变化。公火鸡尾羽可展开呈扇形，胸前一束毛球，母火鸡重为8-9千克，年产火鸡蛋50-80枚，每枚蛋重20-80克。目前饲养品种以“青铜火鸡”和“白色火鸡”为多。
