制作：

1.水调面团调制：在绵白糖、饴糖、豆腐、精盐中加适量水充分搅拌，然后加入小麦粉、芝麻仁继续搅拌成水调面团，静置片刻，使面团处于松弛状态。面团调制时加水量要恰当，面团宜编硬一些，以便压制皮面。

2.成型：将面团等分若干块，静置片刻(5分钟左右)。可手工成型，也可机械成型。手工成型：案板上撒一些扑粉，用擀面杖(专用木棍)先将面团压扁。然后擀薄(约厚1毫米左右)，横向整齐摺叠;摺叠宽度8厘米以内，约在4厘米处的中间从左到右直线开切一刀，再切段，每段宽3厘米以内。在每段摺叠连接处打刀眼(即面片中间切两条缝隙)，筛去扑粉待油炸。机械成型：用轧皮机(皮子车)压薄成型。

3.油炸：油锅油温加热到175℃左右，先将生坯筛净扑粉，预防粉受高油温焦化而污染油质，影响制品色泽。再将生坯倒在笊篱中慢慢放入油锅;待浮上油面时，迅速用笊篱拨动生坯，并且不断翻身，待呈金黄色时，立即捞出油锅。

4.冷却、装箱：捞出油锅后，迅速沥去多余的油，摊开冷却，趁微热装入箱内密封。
