冬天农闲时，家家都会选好一百斤上好糯米，先将五十斤糯米浸透蒸熟，放入酒曲，待酒酿熟后冲入五十斤冷开水。冲缸后待酒糟浮起，要用木把搅动，大约二三十天酒成熟。原酒还要再发酵，再冲下剩下五十斤糯米所做的酒酿中。将二次原酒并入陶都丁蜀出的酒瓮中。

做一坛好酒，需要很多乡土元素，三担头陶瓮，竹笋壳、苎麻、羊皮纸。这酒未喝人已醉了。无论是富裕人家十几年做成的状元红，还是寻常人家酿米酒，都是一件庄重又热闹的事。隔壁邻居都会过来帮忙，有技术的出技术，没技术的打下手。糯米蒸熟后腾腾的热气把孩童们引来，偷偷抓上一把放嘴里是常有的事，惹得大人直叫“小心，别烫着！”酒酿成熟后，开缸都是甜甜的酒味，请老爷爷老奶奶尝个鲜，老人条条皱纹都流淌着笑意。

“可惜现今的人缺了耐心，器具、材质也不那么讲究了。用塑料纸盖酒瓮，塑料桶装酒，这酒便缺了一种味儿。工业化酿酒更是缺了浓浓的乡里情。”妈妈悠悠地叹息。
