茶叶在加工过程中，至少要经过取汁、烘焙、鼓风、择叶、杀青等数十道工序，可谓“千锤百炼”。原来，未加工过的茶叶又苦又涩，且有薄薄的酸味，不适合食用。惟有经过艰难的历练和挑剔的筛选，才能成为可食用，对人体有益的茶。

Timber was cut, processed and hauled from the northwestern and southern regions.

However, the best representatives for Beijing are the vanishing Hutongs and square courtyards. Through hundreds of years, they have become symbol of Beijings life.
