白切鸡又叫白斩鸡，是中国八大菜系粤菜系的一种，始于清代的民间酒店。

制作前要准备这些食材和配料：清远鸡、50克葱、姜、生抽一大匙、黄酒二到三小匙、白醋一小匙。之所以将清远鸡列为首选，是因为它体型小、皮下和肌间脂肪发达、皮薄骨软，制作的白切鸡也更胜一筹。

它的制作方法是：第一步，把鸡放到烫水袋里，等鸡烫死，趁热除去鸡毛，剖开鸡肚子，去除内脏，在鸡的表面抹上盐和黄酒，再在鸡肚里放适当的姜片。

第二步，在铸铁锅里铺满葱，在葱上摆一些姜片，姜片摆成一圈，样子像一朵正在盛开的荷花。

第三步，鸡入锅放到灶上，开中火2分钟，有蒸汽冒出来时，转小火焖25分钟，煮至七成熟关火热汤里浸泡，途中要翻动一下，使鸡均匀受热。用筷子戳鸡，没有血水冒出后，直接放入冰水中，两面都要翻动一下，使鸡完全浸泡在冰水中，跟着继续把鸡肉放回汤锅内浸泡，再次把鸡肉捞出放入冰水中浸泡，如此反复两三次，直到鸡肉成熟，冷却后切块装盘。

它的食用方法也很有讲究，调料盘里加适当的盐、生抽、蚝油、白糖，放上小葱和姜末，倒入锅里的汁水，搅匀成鲜美的蘸料。先吃皮，再吃肉，皮光肉滑，汁多肉嫩，让人永生难忘。

内蒙古有许许多多的美食，其中具有代表性的就是奶豆腐。

奶豆腐在蒙古语中读作“胡乳达”，是蒙古牧民中家家都有的食品，它的形状酷似豆腐，但却不是豆腐。是用羊奶，牛奶，马奶等凝固，发酵而成的食品。味道也有些不同哦！有的微酸，有的微甜，但有一个共同的特征——乳香浓郁。放在冰箱冷藏过的奶豆腐一定要泡在蒙古特有的大碗奶茶里吃，才能变得有嚼劲，不然口感就会变得比较硬、沙，当然也有喜欢这种口感的人。

奶豆腐味道不同还有一个因素，那就是薄厚程度，厚点的奶豆腐一泡进奶茶就柔韧无比，奶香十足。而薄的奶豆腐则入口即化，格外香甜。

奶豆腐也有分熟奶豆腐和生奶豆腐。传统熟奶豆腐的做法特别难，要把熬制奶皮剩下的奶浆，放置几天，直到发酵为止。当奶浆凝成块时，用纱布把多余的水分过滤掉。再将奶块放到锅里熬煮，边煮边搅，直到粘稠，再装入纱布，把黄水挤出来，装模成型。

生奶豆腐的做法相对简单：把鲜奶发酵，倒入锅里煮，让奶浆变成老豆腐的形状，挤出水分成形。

所以，要想吃到风味食物还是很不容易的！
