“8月15月儿圆呀,爷爷为我打月饼呀……”每年一到中秋节,我就情不自禁哼起这首歌儿,想起美味的月饼。今年中秋节,让我更高兴的是,我自己学会了做月饼。

中午,我们吃过午饭,兴高采烈地来到了萧报小记者团组织的“中秋月饼制作活动”教室。在水晶老师的一声“安静”下,我们终于按耐住了激动的心情。随后老师打开几袋冰皮粉,让我们用秤称出两份500克,装在两个铁盆里,再称出500克的牛奶和500克的芒果汁,分别倒入两个铁盆中,接下来就是力气活啦!我们戴上手套,把盆中的“混合物”不停地用力捏,直到混合后成为没有裂缝,不再粗糙的冰皮为止,这个环节和家里做包子馒头时和面粉差不多。下一步最关键,成功失败就靠这一步,我们称出45-48克的冰皮,再次不停地揉啊揉,大约经过十分钟,看到冰皮晶莹剔透了就可以停止了。这时的我们,终于露出了开心的笑容,心里满满的成就感。

话说乐极生悲一点没错,最容易出错的环节马上就到了,我们把冰皮压成扁扁的一块圆形,把边上捏薄,让中间厚一些,把适量的红豆馅放入圆形中间,像平时捏包子一样,把中间捏合拢,就在这时,因为我的圆形冰皮太小了,红豆馅怎么也包不住,越捏越要往外跑,把我急得一头汗,无奈之下,我只能把它揉成一个紫色的球,让红豆馅和白色的冰皮混合在一起,再放入模具按压几下之后,把月饼轻轻推出,放入老师为我们准备的盒子里,一个可口的奇怪的冰皮月饼才算做好了。

别看月饼小小的,它的制作过程一点不简单,不但需要力气,还需要智慧和耐心,做第二个的时候,我吸取了之前的教训,总算做出来一个黄皮红馅,外观正常的小月饼,看到同学津津有味地吃着我亲手制作的月饼,我自豪地笑了起来。真是一次受益匪浅的中秋佳节活动!

“做月饼咯!”奶奶的一声呼唤,把我们都引到了餐桌旁。“快去洗手,准备开动吧!”“要做什么?”“冰皮月饼。”“哦耶!”我不禁欢呼起来。

等我们洗好手,桌上已经摆满了各种工具和食材。擀面杖、糯米粉、量杯、100度的开水等。我们在奶奶的指导下,在盆里倒上面粉,奶奶用手掂了掂,“阿可啊,再多放一点面粉,太少了不够咱们吃的。”我拿起面口袋,又往盆里倒了些米粉。手一抖竟然倒多了,奶奶忙说:“不行,不行……”我只好又倒回去点儿。

咦,这里有三个碗,里面分别盛有不同颜色的粉末。我猜紫色肯定是紫薯粉,黄色就是芒果粉了,还有一种是绿色的,难道是抹茶粉?奶奶说,这些颜色可以让冰皮月饼看起来更加诱人。我把面团也搓成小球,外面粘上不同的颜色的面粉,再把他们用擀面杖擀成一张张面饼饼状,然后将红豆馅儿包进去。最后放在按压器里,按出月饼的形状。

之所以叫“冰皮月饼”,是因为月饼上锅,用大火蒸熟后,还要晾凉,放冰箱里冷藏一两个小时。再取出来吃的时候,冰冰凉凉,味道独特。

在满满的成就感里,品尝着口感弹牙软糯,内馅香甜绵密的冰皮月饼,一阵清凉沁入心脾,这真是吃货的一大乐事。

尽管离中秋节还有一个多月的时间,但广州的月饼大战早已硝烟弥漫。广州酒家、莲香楼、陶陶居等纷纷举办了月饼订货会,各自亮出了最新鲜、最亮丽的牌张。

纵观今年月饼市场,除了花式品种样化、包装更精美外,最令人瞩目的莫过于打“文化牌”了。月饼,本来就是中华民族的特色食品,具有很浓的中国文化特点,如何体现月饼这一中国色彩呢?商家可谓想尽办法:首先是广州酒家的“西关第月饼”将广州西关最传统的民居风情“趟笼门”运用到包装上,让消费者在品尝月饼的同时了解西关文化,提升了月饼的品位;再就是莲香楼115周年个性化纪念邮票的发行,体现了其悠久历史和文化特色,增加了月饼的附加值;还有陶陶居则在传统月饼品种宝库中挖掘文化内涵加以发展……无不体现了今年月饼最突出的共同点———“文化”。

让月饼留下文化的烙印

作为广州西关饮食文化缩影之一的莲香楼在开铺115周年来临之际,国家邮政局特批准发行了莲香楼115周年个性化纪念邮票。据了解,这是全国第一家饮食行业百年老字号发行的邮票。

莲香楼举行了邮票首发式,本次发行的个性化邮票设计精美,一套共有4枚。邮票的主票以“同心结”为主图,附票的设计和构思则以莲香楼115年的悠久历史和特色文化为主题。

据了解,此次个性化邮票发行1500版,每版4套,共6000套。邮票不单独公开发售,只会装入周年纪念的月饼礼盒,日前首发仪式另外加送一枚贴有邮票并盖上邮戳的首日封,共1150个。

据广州市邮政局市场部负责人介绍,推出莲香楼的个性化邮票,主要是因为莲香楼有悠久的历史,其在国内甚至海外华侨中都有一定的知名度。“经历了115年风雨,莲香楼依旧飘香,这十分难得。”广州的百年老店现在已所剩无几,市邮政局正是因为莲香楼的历史内涵和文化底蕴,才联合推出个性化邮票。

据莲香楼的张雪清书记介绍,邮票与月饼搭配并不多见,中秋是亲人朋友团聚的节日,但许多家庭可能没能团聚,朋友难以见面。月饼蕴涵着亲情友情,而邮票包含着将这份亲情友情邮递到远方的意义;另外,月饼是中华民族的特色食品,具有很浓的中国文化特色。此次用主票为“同心结”,附票为百年莲香楼文化的特色邮票搭配月饼,体现月饼的文化品位和中国色彩。张书记表示,今年莲香楼月饼的所有组合都会与“文化”两字分不开。中国烘焙食品糖制品工业协会秘书长周广军也说,莲香楼以这种邮票与月饼相结合的方式推出其产品,不仅在广东是首次,据知,在全国也是第一次。

此次莲香楼将个性化邮票放入月饼礼盒受到月饼客商的,月饼礼盒还未推出时已经有各地客户大量订购,其中不乏来自西藏与新疆的客户。而新疆的客户因为宗教信仰需要,还特别要求莲香楼制作了清真月饼来与这次的个性化邮票搭配。

兔儿爷的起源约在明末。

明人纪坤(约一六三六年前后在世)的《花王阁剩稿》:“京中秋节多以泥抟兔形,衣冠踞坐如人状,儿女祀而拜之。”到了清代,兔儿爷的功能已由祭月转变为儿童的中秋节玩具。制作也日趋精致,有扮成武将头戴盔甲、身披戢袍的、也有背插纸旗或纸伞、或坐或立的。坐则有麒麟虎豹等等。也有扮成兔首人身之商贩、或是剃头师父、或是缝鞋、卖馄饨、茶汤的,不一而足。

“每届中秋,市人之巧者,用黄土抟成蟾兔之像以出售,谓之兔儿爷。”旧时北京东四牌楼一带,常有兔儿爷摊子,专售中秋祭月用的兔儿爷。此外,南纸店,香烛也有出售的。这兔儿爷,经过民间艺人的大胆创造,已经人格化了。它是兔首人身,手持玉杵。后来有人仿照戏曲人物,把兔儿爷雕造成金盔金甲的武士,有的骑着狮、象等猛兽,有的骑着孔雀,仙鹤等飞禽。特别是兔儿爷骑虎,虽属怪事,但却是民间艺人的大胆创造。还有一种肘关节和下颔能活动的兔儿爷,俗称“叭哒嘴”,更讨人喜欢。它虽为拜月的供品,但实在是孩子们的绝妙玩具。

According to Chinese mythology, the earth once had 10 suns circling over it. One day, all 10 suns appeared together, scorching the earth with their heat. The earth was saved when a strong archer, Hou Yi, succeeded in shooting down 9 of the suns. Yi stole the elixir of life to save the people from his tyrannical rule, but his wife, Chang-E drank it. Thus started the legend of the lady in the moon to whom young Chinese girls would pray at the Mid-Autumn Festival.

In the 14th century, the eating of mooncakes at "Zhong Qiu Jie" was given a new significance. During the Yuan Dynasty (A.D.1206-1368) China was ruled by the Mongolian people. Leaders from the preceding Sung Dynasty (A.D.960-1279) were unhappy at submitting to foreign rule, and set how to coordinate the rebellion without it being discovered. The leaders of the rebellion, knowing that the Moon Festival was drawing near, ordered the making of special cakes. Packed into each mooncake was a message with the outline of the attack. On the night of the Moon Festival, the rebels successfully attacked and overthrew the government. What followed was the establishment of the Ming Dynasty (A.D. 1368-1644). Today, moon cakes are eaten to commemorate this event.

Mooncakes are to Mid-Autumn Festival what mince pies are to Christmas. The seasonal round cakes traditionally have a sweet filling of lotus seed paste or red bean paste and often have one or more salted duck eggs in the center to represent the moon. And the moon is what this celebration is all about. Mid-Autumn Festival falls on the 15th day of the 8th month,it is the time when the moon is said to be at its brightest and fullest.

There are two legends which claim to explain the tradition of eating mooncakes. One Tang Dynasty myth holds that the Earth once had 10 suns circling it. One day all 10 suns appeared at once,scorching the planet with their heat. It was thanks to a skillful archer named Hou Yi that the Earth was saved. He shot down all but one of the suns. As his reward,the Heavenly Queen Mother gave Hou Yi the Elixir of Immortality,but she warned him that he must use it wisely. Hou Yi ignored her advice and,corrupted by fame and fortune,became a tyrannical leader. Chang-Er,his beautiful wife, could no longer stand by and watch him abuse his power so she stole his Elixir and fled to the moon to escape his angry wrath. And thus began the legend of the beautiful woman in the moon,the Moon Fairy.

The second legend has it that during the Yuan Dynasty,an underground group led by Zhu Yuan Zang was determined to rid the country of Mongolian dominance. The moon cake was created to carry a secret message. When the cake was opened and the message read,an uprising was unleashed which successfully routed the Mongolians. It happened at the time of the full moon,which,some say,explains why mooncakes are eaten at this time. Mooncakes are usually stamped with Chinese characters indicating the name of the bakery and the type of filling used. Some bakeries will even stamp them with your family name so that you can give personalised ones to friends and family. They are usually presented in boxes of four which indicate the four phases of the moon. Traditional mooncakes are made with melted lard,but today vegetable oil is more often used in the interests of health. Mooncakes are not for the diet-conscious as they are loaded with calories. The best way to wash down one of these sticky cakes is with a cup of Chinese tea,especially Jasmine or Chrysanthemum tea,which aids the digestion.
