经典作品中的美食，是一道耐人寻味的存在。比如在《白鹿原》中，为什么新娘会做一手好面条，是给娘家“长脸”必需的本领?又比如《京华烟云》中，经历了那么多社会动荡和家庭变故的姚木兰，为什么还会有心思慢条斯理地花费一下午的时间，料理一道焖鸡榨菜蒸笋?对于中国人来说，吃饭不仅是为了果腹，也是一种生活方式，体现着生活智慧和生命尊严。而《中国味道》试图寻找一个崭新的充满烟火气息的温暖角度，感受经典作品字里行间透露出的优雅和从容，领略千百年的寻常日子里，一茶一饭的生动气韵，在日用饮食之间带给人们强有力的文化归属感。

起初，我们对中国传统文化的认知不足，过多把注意力放在美食上。随着对文学作品的深入了解，我们慢慢感悟出经典的韵味。一本《京华烟云》，在风云变幻的时代背景下，写出了人物对命运从无力到超然，再到宽怀、同情的境界;一本《红楼梦》，从诗词歌赋到酒令灯谜，从说书笑话到医卜星相、栽种花果、畜养禽鸟，巨细无遗，活脱脱一本中国文化的百科全书。在铺天盖地的资料中，我们第一次知道，原来大部分前面挂一个“胡”的食物都是来自丝绸之路，如胡萝卜、胡麻子;大部分前面挂一个“番”的食物都是来自海上丝绸之路，如番茄、番薯;而宋朝开始就有如今天这般围坐一桌的“合家欢”饭局并开始使用公筷。更让我们欣喜雀跃的是，唐朝就有了冰激凌作甜品，还有一个非常美的名字 “酥山”。制作节目的过程，对我们来说是一次充满惊喜、赞叹与自豪的寻宝之旅，经典作品就是我们的美食地图，每个人都在这里尽情地快意江湖。

还有让我们为之骄傲的选手，倾尽全力要把经典作品里令人垂涎的美食变成现实。“火肉久者无油，有松柏之味;风鱼久者如火肉，有麋鹿之味”，出生在金陵美食世家的杨天恒，翻遍古籍资料，希望复原400年前“南都繁会图”里的金陵味道，看到成品的那一刻，他发现自己突然懂得了什么是“守护传承”。河南开封民间食肆手艺人刘建波是个钻研宋朝美味的鱼痴，最初为了店里生意好想复原“清明上河图”的姜辣羹，没有读过多少书的他，第一次翻开历史书研究千年前的繁华汴梁，靠一次次的尝试来破解配方，也正是这样的尝试，让他被千年前充满巧思的中国味道所感动……

文化自信，是更基础、更广泛、更深厚的自信。在我们的优秀传统文化中，美食是一道独特的风景。以前电视上做菜的节目五花八门，但观众看见的仅仅是一道道美食。而我们想要运用丰富多样的电视艺术形式进行当代表达，把美食与文化相融合，将文学作品中的力量，将每一道美食中的幸福满足感传递给大众。同时，也把中国文化的力量和魅力传递出去，让中国人乃至全世界从美食中感受中国传统文化之美，感受中华民族的血脉与生趣。
